01 - 1.1 lb boneless, skinless chicken breast, cut into 0.8 inch cubes

18 - 4 large pita breads
19 - 1 small red onion, thinly sliced
20 - 1 medium tomato, sliced
21 - 1/2 small iceberg lettuce, shredded
22 - 1/4 cup feta cheese, crumbled (optional)

01 - Combine olive oil, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and pepper in a bowl. Add chicken cubes and mix to coat evenly. Cover and refrigerate to marinate for at least 1 hour.
02 - In a separate bowl, mix Greek yogurt, grated and drained cucumber, minced garlic, olive oil, chopped dill, lemon juice, salt, and freshly ground black pepper. Chill until assembling.
03 - Thread marinated chicken onto skewers. Preheat grill or grill pan to medium-high heat. Grill chicken for 10 to 12 minutes, turning occasionally, until golden and cooked through. Remove from heat.
04 - Place pita breads on the grill and warm for 30 seconds on each side.
05 - Spread a generous spoonful of tzatziki over each warm pita. Layer shredded lettuce, tomato slices, red onion, grilled chicken, and crumbled feta cheese if desired. Fold and wrap tightly.
